White teas are the least processed tealeaves. Leaves are picked and lightly withered then air-dried. Because there is little manipulation, the finished leaf retains its full leaf form. It’s usually picked when the plant has acquired long unopened blossoms that are covered with white hairs from which its name is derived. |
